Turkey Meatloaf, Cheesecake Batter…Oh My!

Hi loves!

If you’ve been following my daily vlogs, you know I’ve been posting all of the recipes I show you on the “daily” over here on my blog! Most specifically I’ve added a separate tab called…you guessed it “As Seen on TrulyDaily” to make navigating the site that much easier for you:) If you see if on the vlog, chances are it will be on that tab (or soon to be on that tab). I’m trying my best to make you finding recipes easily! With that being said, let’s get to TWO recipes I need to share with you!

First up, Spicy Turkey Meatloaf Muffins
Makes 4 servings

1 pack of ground minced turkey
1/2 cup egg whites
4tbsp salsa
1tbsp cornmeal
Sriracha sauce (to taste)

1. Preheat oven at 390
2. Grease a muffin pan with the oil of your choice (I used Coconut Oil)
3. In a mixing bowl place all of your ingredients and mix thoroughly
4. Spoon your “meat mix” into your muffin pan and place it in the oven for 40 mins-50mins or until top is turning golden brown (depending on how big your muffin tin is, you may need to cook it for longer).

I made two one serving size meat loafs in ramekins and the rest in my mini muffin tins (which created 2 more servings of 6 mini muffins).

For one Serving: 193 cals – 6.8g fat – 6.1g carbs – 1.2g fibre – 25.1g protein

These are definitely inspired by Foods of April, which unfortunately isn’t a running blog anymore *sad face* come back April!!!

These are seriously on point. Filled with protein and spicy goodness! Mmm Mmm Good!

And before I let you go and due to popular demand I received when I talked about it 2 days ago, here is my Protein Cheesecake Batter

1/2 cup cottage cheese
1tbsp non fat greek yogurt
1/3 cup oats
1/2 jar banana food or 1/2 mashed banana
1 scoop protein powder (I used Magnum Quattro in Vanilla)
1tbsp cocoa powder
Stevia to taste (optional)

1. Mix all ingredients and enjoy! It’s that simple!

Yeap – one step recipe! That’s it!! And I swear it tastes AMAZING! Definitely a go-to easy meal for me! Especially when the last thing you want to do is cook. Quick, easy and delicious!

For full recipe: 405 cals – 4.5g fat – 42g carbs – 5.6g fibre – 51.9g protein

Oh heck yes! VERY high in protein, which will keep you FULL! I wasn’t hungry until very late into the morning, almost lunch! Not too shabby;)
