Let me forewarn you that this week will involve a lot of peanut butter recipes. Mainly due to the fact that I re-ordered my beloved Chocolate PB2, can’t believe I ever stopped purchasing it! Another reason is that I received quite a bit of interest in recipes including PB2. The truth is – there is SO much you can do with it! One of those recipes is my Peanut Butter Oatmeal Batter…oh yes I went there and completely breakfast of champions approved;) Well at least I think so!
1. In a bowl, mix both the yogurt and cottage cheese
2. Once your dairy mix is fully blended, mix in your Chocolate PB2 and stevia
3. Lately add in your oats to complete a filling and delicious breakfast
284 cals – 4.2g fat – 38.5g carbs – 4.8g fiber – 23g protein
My initial mix was 1/2 cup of both the yogurt and cottage cheese and honestly? It was TOO filling, which is why I dropped it down to 1/4 cup each and 1/3 cup of oats as opposed to 1/2 cup – which is just perfect! Trust me, you won’t need more!
