Coffee Monkey Protein Pancakes

Hi loves!

Ok so I know how this recipe sounds – it sounds a bit cray cray but MAN are these pancakes good and why not have a fun named attached to them? I would even go as far and say that these are the best pancakes I have ever made in my entire life. For reals. 

Ingredients 

For Pancake
1/4 cup non fat greek yogurt
1/4 cup egg whites
1/4 cup brewed coffee (I used Caramel Flavoured Coffee)
1/2 jar of Banana Baby Food (or 1/4 cup of apple sauce/pumpkin)
1/2 cup oats
1/4tsp baking powder
1 scoop protein powder (I used Magnum Quattro in Vanilla Ice Cream)
Cinnamon (to taste)
Stevia (to taste)

For Choco-Coffee Icing
1/4 cup non fat greek yogurt
1.5tbsp brewed coffee
1tbsp cocoa powder
Stevia to taste

Directions
1. Place all pancake ingredient in blender and puree until batter is fully blended
2. Heat 1/2tsp of coconut oil or any oil of choice on top of stove top
3. Once oil is melted and pan is hot, place 1/4 cup of batter and cook as you would regular pancakes. Repeat until all pancakes are done (mine made 5)
4. While your pancakes are cooking, let’s making your choco-coffee icing! Mix your greek yogurt with the coffee, cocoa powder and stevia. If needed, you can add more coffee or stevia! It’s your icing, you decide!
5. When all of your pancakes are done, layer them with icing in-between like you would a cake – why not? Make breakfast special!! Top it off with whatever your little heart desires! Mine was topped off with Raw Dehydrated Coconut Chips :) Mmmm mmm good!

These are seriously ON point! If you came to this page from my TrulyDaily video today, you just KNOW I’m not making things up based on my first taste expression! YUM to the MY!! Seriously! And not only do they satisfy as you are eating them but they keep you full for hours! Winning!

I mean would you LOOK at those layers?? Breakfast never looked so good;) And since I know many of you like to know the calorie count, here are the stats:

449 cals – 4g fat – 48.5g carbs – 56.5g protein – 7.2g fibre – 10.3g sugar*

*These nutritional stats are based on the products I used, it will vary if you change it up

BAM!! I like to have my carbs at the beginning of the day as you BURN carbs throughout the day. Don’t be afraid of carbs, I use to be terrified of them but am adding them in again and I have found to have SO much more energy for both my morning and evening workout…score! You just have to make sure to eat the RIGHT carbs and make sure that your day is not a carb fest. All in moderation.
