Ok so let’s jus say this morning’s breakfast was…wait for it…LEGENDARY!
It all started when I was creeping looking over JazzyThings instagram feed this week and coming upon her Chocolate Coconut Cupcakes. Right away I KNEW I had to give them a shot. I followed her actual cupcake recipe to a Tee except I used stevia as opposed to honey. Her mix? 1/2 cup oats, 5 egg whites, 1 tbsp cocoa powder, 1 tbsp unsweetened almond milk, 1 tsp baking powder and 2T plain greek yogurt. Pretty simple right? She instructs to place the oven at 350 and bake for 12 mins.
I made mine in my mini muffin pan and had to bake for 14 mins. The cupcakes themselves are pretty not overly flavourful, next time I’m thinking of adding either pumpkin or apple sauce to add a bit more moisture and flavour. For this recipe, however frosting was KEY. So I got to thinking about all my favourite ingredients right now and created a Banana Cream Protein Frosting
Ingredients
1/4 cup non fat greek yogurt
1/2 scoop protein powder (I used Magnum Quattro in Vanilla)
1/2 jar of banana baby food
Stevia to taste
Directions
1. Mix all ingredients and place on top of anything your heart desires or….eat as is, I would;)
Oh MAN is that frosting good! Clearly I am OBSESSED with Banana baby food right now, I put it in EVERYTHING!!! Seriously, start using it and you will too;)
Tomorrow, I already know what I’m making for breakfast…French Toast with..you guessed it…Banana Cream Protein Frosting!!!
